Convert between dry, instant and fresh yeast
Result
How it is calculated
Active dry yeast is the reference. Whatever you enter is first turned into its active dry equivalent: instant yeast is divided by 0.75 and fresh yeast is divided by 3. That figure is then turned into the target type: multiply by 0.75 for instant, by 3 for fresh, or leave it unchanged for active dry. So the ratios are 1 g active dry = 0.75 g instant = 3 g fresh. The amount is in grams and must be above zero. The result is rounded to two decimals. These are the fixed ratios in the tool, a good starting point rather than an exact rule, since brands differ in activity and moisture. Converting a type to itself returns the same amount.
Worked example
A recipe calls for 7 g of active dry yeast but you only have instant yeast. Active dry is the base, so the amount stays 7. Instant is used at 75%, so 7 × 0.75 = 5.25. The converted amount is 5.25 g of instant yeast. Had you wanted fresh yeast instead, the same 7 g would become 7 × 3 = 21 g.
Common mistakes
- Swapping 1:1 by weight. Instant yeast is stronger than active dry, so using the same amount makes the dough rise too fast and taste yeasty.
- Setting the From and To fields the wrong way round. Check which yeast the recipe lists and which one you have.
- Entering teaspoons or sachets. The amount is in grams, and a teaspoon of dry yeast weighs only a few grams.
- Expecting the result to adjust rising time. The tool changes the quantity only; proofing time still depends on temperature and dough.
- Treating fresh yeast as an exact 3:1 rule. Some sources give a different multiple, so make small adjustments to the dough rather than trusting the figure blindly.
About this calculator
Recipes written for one type of yeast can be converted to another using standard baking-industry substitution ratios: by weight, fresh (cake) yeast is roughly 3 times the amount of active dry yeast called for, while instant yeast — being more concentrated and needing no proofing — is used at about 75% of the active dry amount, since its finer granules and different processing let it hydrate and act faster with less yeast needed for the same rise.
These ratios exist because the three products aren't just different forms of the same organism in name only — fresh yeast is a moist, perishable cake with a shorter shelf life, active dry yeast is dried into coarse granules that traditionally need proofing in warm water first, and instant yeast is dried into finer particles that can be mixed straight into flour — so a 1:1 substitution by weight would throw off both rise time and final flavor.
Home bakers substituting whatever yeast they have on hand for what a recipe specifies, professional bakers converting commercial fresh-yeast formulas to dry yeast for home kitchens, and recipe developers writing conversions for readers all rely on these standard ratios to keep a bread or dough recipe's rise consistent regardless of which yeast form is used.
