Caramel Stage Temperature Calculator
Pick a caramel stage to see its target cooking temperature.

How it is calculated
This tool is a lookup, not a measurement. You pick one of six stages, and it returns a fixed target in °F, which it converts to Celsius with °C = (°F − 32) × 5 / 9, rounded to a whole degree. The built-in values are: thread 230 °F (110 °C), soft-ball 235 °F (113 °C), light caramel 320 °F (160 °C), medium caramel 340 °F (171 °C), dark caramel 350 °F (177 °C) and burnt 360 °F (182 °C). A short description of the colour and taste is shown with it. If the stage is left out of the request entirely, light caramel is used; an empty or unknown stage name returns nothing. Firm-ball or hard-crack stages are not in the tool, and the temperatures are not adjusted for altitude or for thermometer error.
Worked example
You want classic amber caramel, so choose medium caramel. The tool returns 340 °F as the target. Converting: 340 − 32 = 308, then 308 × 5 / 9 = 171.1, shown as 171 °C. The description reads "Medium caramel — amber color, classic caramel taste." If the pan reads 340 °F, you are at the target; a stage lower on the list, light caramel, is 320 °F (160 °C), which is 20 °F cooler.
Common mistakes
- Reading a temperature meant for one scale on the other. 340 is Fahrenheit here; a pan at 340 °C is far beyond burnt, and 171 is the Celsius figure.
- Expecting stages like firm-ball, hard-ball or hard-crack. Only thread, soft-ball and four caramel shades are included, so a hard candy recipe needs its own temperature.
- Treating the number as exact. The Celsius values are rounded to whole degrees, and syrup temperature keeps rising quickly while the pan is off the heat.
- Trusting an uncalibrated thermometer. A few degrees separate light from dark caramel here, so a probe that reads 5 °F off can give a different colour.
- Cooking to the table temperature without checking colour and smell. Sugar mixtures with added butter, cream or glucose do not follow plain-syrup values.
About this calculator
Candy making relies on the boiling point of a sugar syrup as a stand-in for its water content and final texture — as sugar water boils, water evaporates and the boiling point climbs in a predictable curve from about 100°C to well over 170°C. Classic stages mark specific points on that curve: thread at roughly 110–112°C (230–235°F), soft-ball at 112–116°C (235–240°F), progressing through firm-ball, hard-ball, soft-crack and hard-crack around 149–154°C (300–310°F), where the syrup is essentially pure sucrose with almost no water left.
Past hard-crack, continued heating triggers the Maillard and caramelization reactions rather than water loss, producing light, medium and dark caramel roughly between 160°C and 180°C and beyond — each shade trading sweetness for the bitter, nutty notes that define caramel sauce, pralines and brittle. Professional confectioners rely on a calibrated candy thermometer rather than the older cold-water-ball folk test because a few degrees separates a chewy caramel from a burnt one. This calculator covers six targets — thread (230°F), soft-ball (235°F), light (320°F), medium (340°F), dark (350°F) and very dark or burnt caramel (360°F) — and shows the temperature in °F and °C with a short description; the firm-ball to hard-crack stages above are background and are not on its list.
